Weeknight Saviour – A Chicken So Easy Dinner Will Be A Breeze
Sometimes on a week night- scratch that- OFTEN- dinner is the last thing I want to worry about.
So a recipe that only needs 5 ingredients is the thing to save the day. Here is my recipe for Soya Chicken Thighs. I prefer boneless, skinless chicken thighs for a quick recipe because they are the redder chicken meat and remain juicy after a stir fry.
So here’s what you’ll need to serve two for dinner-
Approx 1 pound chicken thighs (boneless, skinless),
2-3 garlic cloves,
1 tsp ginger- grated,
1/4 cup low sodium soya sauce,
1 tbsp olive oil.
Optional seasoning – black pepper/ red chilli flakes
Garnish – chopped cilantro or green onions/scallions
How to make it:
Clean and slice chicken thighs into cubes pieces. In a bowl mix soya sauce, chopped garlic and grated ginger. You need marinate the chicken in this mix for only while your pan heats up.
Add oil to a hot pan and transfer chicken to it. Cook for 2-3 minutes on one side, stir and change sides of chicken pieces and then cover and cook on medium heat for about 10 minutes.
If you want you could add chopped scallions and cilantro at this point. That’s it!
